This pork tenderloin is so juicy and moist. Fillet is a lean piece of pork, so it benefits from the fat in the bacon. I use bacon in the middle, which is leaner than other cuts because it is cut from the belly. If you want to serve it with something sweet, this goes great with apricot jam or sweet chili sauce.
