Ambrosia fruit salad

Ambrosia is a creamy fruit salad that is traditionally made from pineapple, coconut, fruit cocktail, cream and walnuts. This lighter version uses mostly fresh fruit, including berries and bananas. Try my tropical fruit salad, my fruit pizza, and my rainbow fruit skewers with yogurt fruit dip for more fun serving fruit.

Why is it called ambrosia salad?

“Ambrosia” is the food of the gods in Greek mythology. Ambrosia salad dates back to the 19th century when fruits like oranges and coconut were exotic and difficult to find.

There are many variations of this salad. I toggle mine by adding lots of fresh fruit. The only canned fruit in my recipe are the mandarins.

How to go ahead

This fruit salad is so easy to whip up and perfect for getting on at a party. In fact, it does need to be refrigerated for at least two hours, but ambrosia can be refrigerated for up to 8 hours.

Variations:

If there’s a fruit that you don’t have or like, you can leave it out and add more of one of your favorites. Add grapes or peaches. Sub-pistachios or pecans for walnuts. Try Greek yogurt instead of Cool Whip.

Combine fruit with cream, coconut and marshmallows.

Chill for 2 hours and serve.

Top with nuts.
