This simple weekday pasta dish is light and tasty! I love pasta and often long for it. To keep it light, I load it up with lean protein like shrimp and lots of veggies! Another popular shrimp and pasta dish is this Shrimp Scampi with Broccoli Orzo.

Helpful tips:

I usually use every wine I drink. Pinot Gris, Pinot Grigio, and Sauvignon Blanc are all good choices. You can also leave out and use more broth. I like adding crushed red pepper flakes to create a little warmth, but I would leave this out for the kids. Buy prawns still frozen and defrost as needed. Most shrimp arrive in frozen stores, so you can buy them frozen too and defrost them as needed so they’re as fresh as possible. Angel hair with shrimp and asparagus is a quick and easy pasta dish made from fresh tomatoes and asparagus in a light tomato broth.

1 a bunch of asparagus, hard ends removed, quartered1 tablespoon olive oil6-8 ripe plum tomatoes, diced2 Cloves garlic, thinly cut16 oz large shrimp, peeled and veined1/2 Cup chicken soup2 oz White winekosher salt and fresh pepper, taste1/2 TL herbs of Provence, or you can use your favorite herbs1/2 TL red pepper flakes, there is a little kick8th oz Angel hair pasta, Wheat or gluten free

Season the prawns with salt and pepper. Heat a large pan over high heat.

When the pan is hot, sprinkle with oil and add shrimp.

Cook the prawns for about 1 to 2 minutes on each side, until they are almost cooked through, and remove them from the pan. Put aside.

Reduce the heat of the pan to medium, add olive oil and garlic and sauté for about 1 minute until golden brown.

Add tomatoes and season with salt and pepper. Let simmer for about 4 minutes.

Add white wine and broth and stir, cook for 1 minute, then add asparagus, salt, pepper and herbs.

Cover and simmer over medium heat for 10 minutes until vegetables are tender.

While the sauce is boiling, bring a large pot of salted water to the boil and cook the pasta al dente. When done, drain.

After the sauce has cooked for 10 minutes, put the prawns back in the sauce and finish cooking for about 1 minute (do not cook too long, otherwise the prawns will become hard).

Add the noodles to the sauce and stir well.

Divide equally into 4 bowls and top with a good grated cheese.
